- 150g quinoa
- 1/2 cucumber
- 200g cherry tomatoes
- 100g feta cheese
- 50g black olives
- 1 lemon
- 3 tbsp olive oil
- a few leaves fresh mint

Cook the quinoa according to package directions. Let it cool.

Meanwhile, dice the cucumber and feta, and halve the cherry tomatoes.

In a large bowl, combine the cooled quinoa, vegetables, feta, and olives.

Prepare the dressing by mixing the lemon juice and olive oil. Season with salt and pepper.
