Provençal Stuffed Tomatoes

Ingredients
- 4 large tomatoes
- 300g sausage meat
- 1 onion
- 1 clove of garlic
- 50g breadcrumbs
- 1 tbsp Herbes de Provence
- 2 tbsp olive oil
- to taste salt, pepper

For a lighter version, replace the sausage meat with a mixture of ground veal and cooked rice.

Preheat the oven to 350°F (180°C).

Wash the tomatoes, cut off the tops, and gently scoop out the insides.

Chop the onion and garlic. Mix them with the sausage meat, half of the breadcrumbs, herbs, salt, and pepper.

Fill the tomatoes with the stuffing.

Arrange the tomatoes in a baking dish, drizzle with olive oil, and sprinkle with the remaining breadcrumbs.
